Banana and Blueberry Loaf #mumsunited

I am currently taking part in a new Soup project that involves taking part in a knew initiative from the Heart Foundation of Australia. It is called Mums United. In the pack I received a great little info book that includes some recipes. I have decided to give them a whirl this week and the first cab of the rank was the Banana and Blueberry loaf and let me tell you it is delicious we have had it for morning tea today, and I can't see it lasting much longer while B is at home.

I thought it would share it with you. If you do give it a whirl (which I highly recommend that you do!) please let me know what you thought of it!

Serves 12
Prep time: 10 minutes
Cooking Time: 50 minutes

2 cups self raising flour
1tsp bicarb soda
1tsp ground mixed spice
1/2 cup brown sugar
1 cup reduced fat milk
2 eggs
2 large ripe bananas, mashed
1 cup fresh or frozen blueberries (I used frozen, I save my fresh for on my muesli...)

1. Preheat oven to 170 degrees Celsius. Grease and line 13.5 x 24cm loaf pan with baking paper.
2. Sift flour, bicarb soda, and spice into a large bowl. Stir in brown sugar. Combine milk, eggs and banana in a bowl then stir gently into the flour mix until just combined.
3. Spoon into loaf pan, scatter over blueberries and gently poke them into the batter with your fingertips, smooth the surface. Bake for 50 minutes or until skewer inserted into center comes out clean. Stand for 10 minutes in the pan before lifting out onto a wire rack. Serve warm, toasted or at room temp.
